There are still allot of aspects that I could get into that will help get a clearer understanding of this question however i believe that a big reason why people say that they prefer one or the other apart form story and characters is the arts style and what they know let me explain, people other the age of 30 may have watched anime when it first aired and i mean the original ones such as one piece and sailor moon and various other popular ones and such have been brought up with them where as people just getting into anime aged between 10 and 20 have been brought up through the new anime season where there are hundreds upon hundreds to pick and especially if they are only recently looking at anime they may watch a few and then may not be able to adapt back to what it was like 20 even 10 years ago.
The art style is not the only difference fights where slower and less action packed back then compared to how they are now, less flashy explosions its like the anime world has gotten a Michael bay makeover, this of course depends on the genre and what type of anime it is, however some genres have stayed virtually the same for example romance and slice of life animes where they don’t need over the top things and flash images because the are trying to imitate a romance and such the only thing that will have changed is the art style.
old fight scene

new fight scene

As i said before there are a near unlimited amount of animes now to watch and the majority are form the last 15 years, with more genres than we know what to do with, old animes tended to stick with the generic genres such as action, fantasy and romance and only tended to mix a few at a time although there are exceptions e.g. action fantasy etc. Now with new animes there are hundreds of new genres that frankly even I don’t know what they mean and these genres are tend to mix together in bulk and can be registered under 10 to 15 genres at one time, because the animes have that many different things in them even if its only 12 episodes long.
One thing i will say about new animes an of course this is my opinion, the try and fit so many different things everyone likes into one idea so that that one thing will be pleasing to everyone where as in the past they had specific animes for specific people although they still have defining genres now the are all mashed tog her with each other and this seems to work well.
Going from that I want to talk about the difference in ideas in old animes there was allot of ideas that were about robots and gang warfare and such maybe this was with the times however now there are hundreds of different ideas in which you would never think of doing, it can start as simple as throwing 2 genres together for example I typed in to Google horror romance animes and i got a huge list of them, I know of an anime called school days which is a romance in which the female main character murders people trying to steal her boyfriend, in the 1960s this may have been classed as controversial and never would have been considered to be created , but now things have changed and practically no idea is off limits.
Below are some examples of new animes and genres that may not have been considered when creating old animes.
High school DxD genres
Comedy, Demons, Ecchi, Harem, Romance, Shounen
When putting demons into anything there s a controversial barrier you must pass but with new anime they just throw it in with most ideas, this has comedy and ecchi as its main tags and in allot of ways ecchi is one step away from being pornographic which is another thing that wouldn’t have been put into old animes, the series also doesn’t stay with the same themes for very long, one moment may be a action packed fight scene and the next moment maybe some comedy and so on this is another example of trying to please the wider audience.

Tokyo Ghoul genres Action, Drama, Horror, Mystery, Psychological, Seinen, Supernatural
Now in my opinion this is one of the smarter new animes and is one of the very popular modern animes of our time, maybe due to its original idea but i think the genre choices have an impact, unlike the pervious example these genres are all of the same variety and can easily link with each other the creator knew what he wanted to make and what mood he wanted to set where as looking at first glance at high school dxd you would think it was a kid doing a doodle and that they couldn’t decide what to draw so they drew everything at once, Tokyo ghoul sets a mood straight away and doesn’t deviate away from it there is very little humour and almost all is a serious plot line.
